Grain Free Granola
Ingredients
1 cup sunflower seeds
1 cup pumpkin seeds
¾ cup sesame seeds
2 cups coconut flakes
2 tbsp maple syrup + 2 tbsp honey (you can use all honey or all maple syrup but I find that honey helps it stick better. Totally up to you what you want to use! I’ve done both!)
2 tbsp melted coconut oil (it will melt in oven as well if not fully liquid – so don’t worry about melting if inconvenient!)
2ish tbsp vanilla extract
1.5 tsp salt
1 tbsp cinnamon
1/3 cup chocolate chips (you can use more or less!)
Instructions
Combine sunflower seeds, pumpkin seeds, sesame seeds, coconut flakes in large bowl.
Cover mixture with sweetener, cinnamon, salt, vanilla extract and coconut oil and toss.
Evenly distribute mixture onto lined baking sheet
Toast in oven or airfryer for about 4-5 minutes. Keep an eye on it and once coconut flakes start to brown on edges, remove from oven.
Allow to cool for 2 minutes and sprinkle chocolate chips on top. Push granola together on baking sheet so that it is tightly packed – this allows to stick together better.
Let set in fridge or freezer for about an hour. Once fully hardened, break apart and store in container in fridge.
